Upon arrival, there were two containers being thawed in the prep sink, resting in stagnant water, and there was a stainless steel bowl resting on the counter containing thawing guacamole.
Potentially hazardous food shall be thawed by one of the procedures that follow:
1. Under refrigeration that maintains the food temperature at 5°C (41°F) or less
Or
2. Completely submerged under running water at a water temperature of 21°C (70°F) or below; with sufficient water velocity to agitate and float off loose particles in an overflow.
The water was turned back on, and the bowl on the counter was relocated the the refrigerator.

Upon arrival, there was an open cup of Ramen Noodles, and an Open bag of Cheetos sitting on the shelf above the Lowboy Prep Space. An employee may not eat, drink or use any form of tobacco unless the use occurs in designated areas where the contamination of exposed food; clean equipment, utensils and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result. Keep all food and drink in designated areas only, or assign a spot in the refrigerator labeled for employee use only. These items were relocated.

There was no soap or paper towel at the hand wash sink in the kitchen. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder or bar soap, individual, disposable towels, a continuous towel system that supplies the user with a clean towel or a heated-air hand drying device. Soap and Paper towel were supplied.

Never stack, and always store the items that do not have a compartment below the frost line, in the lower refrigeration unit below. 1) Observed several vacuumed sealed packages of tuna completely thawed and being held in refrigeration. All vacuum sealed fish needs to be removed from packing before thawing to prevent growth of hazardous micro-organisms. Items were discarded.
2) Green Sauce with sesame seeds was observed thawing in a water bath in the prep sink.
Potentially hazardous food shall be thawed by one of the following procedures:
(1) Under refrigeration that maintains the food temperature at 41°F or less
(2) Completely submerged under running water at a water temperature of 70°F or below; with sufficient water velocity to agitate and float off loose particles in an overflow, for a period of time that does not allow thawed portions of TCS food to rise above 41°F.

Observed the temperatures of the warewasher as 101°F for the wash cycle and 98°F for the rinse cycle, after several washing cycles. The temperature of this particular model uses chemicals to sanitize, and may not be less than 120°F.
Call for service, and submit service report to the Department by May 14, 2024.
Facility must use their 2-bay sink to wash/rinse their wares and may utilize a clean/sanitized busing container for their sanitizing process until the warewasher has been serviced.

A food handler helped the department with the warewashing machine, and immediately handled food and food surfaces. Food employees shall clean their hands and exposed portions of their arms as follows to prevent the spread of harmful micro-organisms from this raw product of animal origin to this ready-to-eat food:
(1) Immediately before engaging in food preparation activities such as working with exposed food, working with clean equipment and utensils, and working with unwrapped single-service and single-use articles.
(2) After touching bare human body parts other than clean hands and clean, exposed portions of arms.
(3) After using the toilet room.
(4) After caring for or handling service animals or aquatic animals
(5) After coughing, sneezing, using a handkerchief or disposable tissue, using tobacco, eating or drinking.
(6) After handling soiled equipment or utensils.
