-Debris observed inside the ice machine. Dispose ice and clean the machine as per manufacturer instructions.
In equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders and water vending equipment as follows:
(i) At a frequency specified by the manufacturer.
(ii) Absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

Mozzarella cheese was stored at room temperature without a date/time log. All TCS foods stored at room temperature must be logged and discarded after 4 hours. The facility must discard any unused mozzarella by 4:00 pm today.
