Employee beverages were stored in areas near utensils. Beverages were relocated to prevent contamination. 151. Food contamination prevention. (a) Eating, drinking or using tobacco. (1) General prohibition. An employee may not eat, drink or use any form of tobacco unless the use occurs in designated areas where the contamination of exposed food; clean equipment, utensils and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result. The sole exception to this prohibition is in paragraph (2). (2) Exception for closed beverage containers. A food employee may drink from a closed beverage container if the container is handled to prevent contamination of the following: (i) The employee's hands. (ii) The container. (iii) Exposed food; clean equipment, utensils and linens; and unwrapped single-service and single-use articles.

Inspector Comments
The ambient temperature inside the 2 door prep cooler and the dessert display cooler were observed at 49 and 61 degrees F. The facility voluntarily discarded TCS foods and contacted a technician for service/repair at time of inspection. The facility may not use the units until they are able to maintain TCS foods at 41 degrees F or below abd permission for use is granted by BCDH. Submit a work order for repair to the Department. Cheese sauce in the warming unit temped at 123 degrees F. The owner turned up the unit to bring the cheese up to a minimum of 135 degrees F.

The hot water dish machine did not maintain a minimum wash temperature of 150 degrees F. The owner immediatly contacted EcoLab for service. Submit a work order to the Department.

-Raw beef was stored above cooked crab and raw salmon in the walk-in freezer. EPS discussed proper stacking and/or separation of foods to prevent cross contamination. TCS foods were rearranged for proper storage. -Food was uncovered in several reach-in/prep coolers. All food must be covered in storage. -Large bags of dry foods were opened in storage. Once opened, all food must be stored in sealed packages, covered containers, or wrappings.

Facility lacks temperature test strips, or an irreversible waterproof thermometer, to verify proper sanitization of utensils, after the final rinse cycle of the dish machine. In hot water mechanical operations: by being cycled through equipment that is set up as specified in § 675(a), (d) and (e) (relating to mechanical warewashing equipment) and achieving a utensil surface temperature of 71°C (160°F) as measured by an irreversible registering temperature indicator.
17 Proper reheating procedures for hot holding

Inspector Comments
Cheese sauce was reheating in a food warmer and temped at 125°F. The cheese sauce was transferred to a pot and rapidly heated on the stove. TCS foods must be reheated within 2 hours and hot held at a minimum of 135°F.

Inspector Comments
The ambient temperature inside the dessert cooler was observed at 55 °F. TCS foods inside the unit temped at 47°F. All TCS foods were relocated for proper cold holding. The dessert cooler may not be used until it is repaired, maintaining 41°F or below, and permission for use is granted by BCDH. Submit an invoice/receipt for repair to the Department. Inspector Comments
The dessert display cooler behind the counter, the salad prep cooler, and the 1 door prep cooler ambient tempertures were observed at 51 to 58 degrees F. The manager instructed employees to discard all TCS foods. The manager was instructed to use a date/time log until the units are repaired. The facility must provide invoices for repair, and may not use the units to store TCS foods (without time control), until the units are repaired, and permission for use is granted by BCDH.

A dead roach-like insect was observed on the floor in the basement. The facility has routine pest control service every 2 weeks. Service reports were provided at time of inspection. Clean and sanitize affected areas. -The door sweep/weather stripping is damaged on the back garage door. Repair/replace to provide a tight seal.
