Inspector Comments
Observed cooked eggs stored in Bain Marie over the unit’s maximum threshold at 45F. Affected items removed and placed into other cold-holding. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Ensure maximum load limits of cold-holding units are maintained.
41 In-use utensils: properly stored

Observed used beverage stirring utensils stored in cups of stagnant liquid. These in-use beverage stirring utensils may only be stored in the following manner: *Under running water *In hot water 135F or above *On cleaned and sanitized prep tables where the frequency of cleaning is at least every four hours *In sanitizer solution and allowed to air dry before use
46 Warewashing facilities: installed, maintained, & used; test strips

Observed 3 compartment sink is not being setup correctly with 93F wash water and no sanitizer solution. Always set up the 3 compartment sink to wash (soap & hot>110F water), rinse, and sanitize (50-100ppm chlorine or 200-300ppm quaternary ammonia).

There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. A completed application(SA-71)for CFSM, or proof of enrollment in an approved safety class must be submitted to the Department.

No paper towels available at handsinks. Make sure paper towels are readily available at handsinks. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder or bar soap, individual, disposable towels, a continuous towel system that supplies the user with a clean towel or a heated-air hand drying device.
13 Food separated & protected

Inspector Comments
Scoop handle found in a couple of sugar containers as well as ice machine. Ensure scoop with handles are placed out of product to prevent from contamination.
