Long handled spoons used for stirring drinks are stored in Quat sanitizer solution in between use. When needed they are brought out of the solution and directly used to stir drinks. Quat residual must not go inside consumable food products. When using Quat as a sanitizer on food surfaces, it must air dry. Manager was approved to store the spoons in a dry container and will mark them to be washed/rinsed/sanitized at least every 4 hours. Send Dunkin Donuts policy and procedure for storing spoons in between use.

Sanitizer buckets have no sanitizer residual. One wet wiping cloth is stored over top of the container. Refill buckets with quat at 150-400 ppm. Always store the wet wiping cloth directly in the sanitizer solution at proper concentration levels.
