There is no Certified Food Safety Manager (CFSM) present.
A CFSM must be onsite at all times of operation. Enroll employee(s) in accredited Food Manager course. Register certificate with BCDH using SA-71 when obtained. Application SA-71 attached.
The CFSM is not training employees properly as the Person in Charge (PIC) is not aware of using test strips to ensure proper concentration of sanitizer for washing wares. PIC was instructed on use of strips. Product in use is meant to be used at 150 - 400 ppm quaternary ammonium. Test regularly.
