Observed sautéed onions within the top portion of the prep unit at 84F. Ensure hot food is cooled rapidly from 135F and above to 70F within two hours, and from 70F to 41F and below within an additional four hours. Ensure food is cooled completely prior to placing into deep pans or the prep unit.

Observed unapproved, porous ceiling tiles in new area with sandwich press, soup and serving counter. Ceilings of a food facility shall be designed, constructed and installed so they are smooth and easily cleanable. Replace with approved tiles as they become stained/damaged.
