Ready-to-eat, time/temperature control for safety (TCS) foods such as the grab-and-go salads and sandwiches, as well as prepared food in reach-in coolers, are not date marked to show when they were opened or prepared. These foods must be sold, used by or discarded within 7 days of opening or preparation.

Observed unapproved, porous ceiling tiles in new area with sandwich press, soup and serving counter. Ceilings of a food facility shall be designed, constructed and installed so they are smooth and easily cleanable. Replace with approved tiles as they become stained/damaged.
