The sanitizer of the bar warewasher was measuring 25ppm. Machine was primed 2x and sanitizer was still low. Service was called for. Submit report and proof to the Department that machine is reading at 50ppm.

Inspector Comments
1) Diced Tomatoes in the Main Prep Unit were measuring a temperature of 55F.
2) Sliced tomato was being held above the frost line in the same prep unit.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF, and placed below the frost line for proper cold holding.
The diced tomatoes were placed on time and will be discarded after 4 hours, while the sliced tomatoes were relocated to a different container and placed in proper refrigeration.

Upon arrival, the hand sink was blocked by a box and Romaine lettuce, and was inaccessible for hand washing. Handwashing stations must be maintained so they are always accessible for employee use. Box and lettuce were relocated to different area and were protected.

1) Food is being stacked on the shelves of the walk-in cooler, with some of the roasting pans touching uncovered, ready-to-eat food items. Ensure that all items being cooled are not stacked and not touching any of the other foods. Once food item is cooled completely, cover to prevent contamination.
Pan was relocated to a different shelf.
2) Single use container was being used as a scoop, and was found resting in food product in the lower refrigerated compartment of the main Prep Unit. All scoops must have a handle and stored in a way that does not touch the food product to prevent cross contamination. Single use container was removed/discarded and replaced with a spoon.

Inspector Comments
No chlorine residual present in warewashing machine behind the bar. It is assumed that the pump is not working correctly - bottle was replaced, machine re-primed and it still would not dispense sanitizer. Service was called for, and they will be out to fix.
Test machine regularly to ensure proper sanitization at 50 ppm chlorine.
Wares must be sanitized in 3-compartment if the machine is used before the chlorine is replaced and tested.
