Inspector Comments
Cold brew coffee measured at 58F. This product was removed for discard. Do not store cold brew inside until repaired. Ambient temperature on digital display is reading 48F. Digital temperature probe reads 54F inside over approximately 10 minutes. Manager stated that the unit had been opened for an extended period for cleaning a leak. This unit was reportedly repaired after last inspection. No invoice received yet. Call for service. Do not store cold foam in this unit to prevent fluctuations. Monitor digital display and ambient temperatures inside.

Cold brew and chilled coffee is marked for time control but he time frame for use is marked at 8 hours. This was corrected on site by relabeling. If time--rather than temperature--is used as the public health control the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.

1. Food worker rinsed a food container in the handwashing sink and dried it with paper towels to reuse. Wares must be washed, rinsed, sanitized, and air-dried properly. Removed container to warewashing area. Corrected on site. 2. Handwashing sink in the warewashing area is blocked. Correct after shipment is cleared. A handwashing facility shall be maintained so that it is accessible at all times for employee use. A handwashing facility may not be used for purposes other than handwashing.

Cold brew refrigerator is not holding cold brew (a TCS food) at 41F or lower as required. Affected food was discarded. Call for service. Use time control for safety of coffee stored in this unit until corrected. Label and use or discard within four hours. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.

Inspector Comments
There are rodent droppings and an open packet of rodent bait in the storage area upstairs. There are openings in the walls and ceiling here. Throughly clean the affected area after the day’s operations are complete. Notify pest control operator of findings. Follow recommendations. Monitor this area and communicate findings as need.

The floor near the drive-through beneath the donut rack must be throughly cleaned. The chipped area surrounding the floor sink must be grouted/ repaired to prevent food debris from accumulating. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Handwashing sinks not supplied with soap and/ or paper towels. Handwashing sinks must be supplied at all times with soap and means of drying hands in sanitary manner. Intsall paper towel dispenser. Dispenser is on site.

Inspector Comments
Several refrigerated units do not contain appropriately placed thermometers. The sensor of a temperature measuring device shall be located to measure the air temperature or a simulated product temperature in the warmest part of the unit. Replace thermometers in cold brew unit and lowboy refrigerator.

Inspector Comments
Some fruit flies present. Pest control records indicate treatment every 2-3 weeks. Recent log indicates treatment for fruit flies. Continue to communicate observations with pest control company and respond accordingly. Keep trays of doughnuts covered as much as possible. Keep all sources of moisture and food residue/ debris to a minimum.
