In the sandwich prep unit, half of a cucumber was resting with its plastic wrapper in direct contact with the cut cucumbers in that container. Food may only come into contact with containers or wrappers that have been cleaned and sanitized. The cut cucumbers were discarded and the wrapped cucumber was relocated to the refrigerator below.

The double door lowboy refrigerator in the back, along with its contents was measuring temperatures ranging between 54-56F. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. All contents were pulled and discarded. The unit was pulled out and the coils and vents were cleaned. Facility is going to monitor the unit to see if this helps lower the temperature and if it doesn’t, service will be called for.

Eggs - a Raw Time/Temperature Control for Safety (TCS) food product - are being stored directly over ready to eat foods in the first under counter refrigerator. Always store raw TCS products under ready to eat foods. Eggs were relocated to the bottom shelf of the refrigeration unit.

Cooked chicken in the walk-in was measuring a temperature of 45ºF. Time/temperature control for safety (TCS) food and equipment holding TCS foods, must be cold held at or below 41ºF. Chicken was relocated to a shallow pan for faster cooling.

Can of cheese product is being opened and then stored in its original container. Once a can is opened, the food product must be stored in a food grade container. Cheese was placed in a food safe container.

Tongs were being stored on a hook next to the fryer, touching the unclean surface of the wall. During pauses in food preparation or dispensing, food utensils may be stored on a clean/sanitized portion of the food preparation table or the cooking equipment only if the in-use utensil and the table/equipment are cleaned and sanitized frequently. The tongs were removed and placed in the warewashing area.

Remove all items, discard those that are exposed to dripping water/refreezing, defrost, clean/sanitize whole unit, and replace seal/gasket.

Meatballs and sauce located in the heating and hot hold unit range from 122-129°F. This unit must hot hold food at a minimum of 135°F. Repair or replace. Reheat foods to 165°F on the stove.
