facility is not keeping their shell stock records for 90-days. The identity of the source of shellstock that are sold or served shall be maintained by retaining shellstock tags or labels for 90-calendar days from the date the container is emptied.

Inspector Comments
1) Wrapped, dried cured meats were being stored on the outer lip of the salad prep unit, and were not kept cold. This were discarded.
2) Several food products held in refrigeration, and freezers - including the prosciutto in the downstairs freezer - are not being covered. Cover all products in refrigerators and freezers to prevent contamination.

Proper cold holding temperature

Inspector Comments
Cooked Mushrooms and Eggplant were measuring a temperature of 48°F and 50°F in the cold-hold unit above the pizza prep area. It was determined that the containers that they were held in were too short to reach the cold protion of the unit. All Time/temperature control for safety (TCS) food must be cold held at or below 41ºF at all times. These food items were discarded and taller containers will only be used in this cold-hold unit.
