Inspector Comments
Found Ann open bottle of Gatorade being stored in the bottom portion of the first Prep Unit on the main cook line. An employee may not eat, drink or use any form of tobacco unless the use occurs in designated areas where the contamination of exposed food; clean equipment, utensils and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result. Bottle was removed.
14 Food-contact surfaces: cleaned & sanitized

Upper interior surface within the ice machine contains pink and black mold-like/bacteria-like substance. Empty ice and discard. Clean and sanitize interior surfaces prior to next use.
20 Proper cold holding temperature

Hard boiled eggs in the second prep unit of the main cook line were measuring a temperature of 54F. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Always ensure that foods are at 41F or below before placing in the prep units for holding. The eggs were discarded.

Upon arrival, there were two containers sitting next to the 3-bay sink, each containing water and seafood. One had octopus and the other contained mussels. Potentially hazardous food shall be thawed by one of the procedures that follow: 1. Under refrigeration that maintains the food temperature at 5°C (41°F) or less, or at 7°C (45°F) or less 2. Completely submerged under running water at a water temperature of 21°C (70°F) or below; with sufficient water velocity to agitate and float off loose particles in an overflow. The octopus was measuring a temperature of 42F, and was relocated to the walk-in cooler for proper holding. The mussels were measuring at temperature of 72F, and were discarded.

Facility is using single use plastic containers as scoops for some of their dry goods and for the Parmesan cheese in the prep unit. Must use a proper scoop with a handle to prevent contamination.

All hot water faucets at the 3-bay sink have severely poor pressure and can not fill the bays properly. Call plumber and have them fix. Once completed, send photos and service report to the department by September 3, 2024.

Single use containers being used for scoop in the flour container by the espresso area. Must use a proper scoop with handle to prevent contamination. This container was removed and discarded.

Inspector Comments
There was no sanitizer present in the 3-bay sink of the kitchen, it was reading 0. Sink was emptied and refilled but still read 0 after fresh sanitizer was added. Utensils and food-contact surfaces of equipment shall be sanitized after cleaning, and before use. For chemical operations, the application of sanitizing chemicals by immersion, manual swabbing, brushing or pressure spraying methods, using a solution of either 50-100ppm chlorine or 200-300ppm quaternary ammonia, must be completed before next use. Call for service and maintain by testing before each use.

1) Upon Arrival, the sanitizer compartment of the 3-bay sink was filled with water that contained grease, old food debris, and dirty water. Sink was emptied, cleaned/sanitized and refilled with Sanitizer. 2) Upper interior surface within the ice machine contains black mold-like/bacteria-like substance. Empty ice and discard. Clean and sanitize interior surfaces prior to next use. 3) The soda guns and wells of the bar contain build up and must be cleaned and sanitized before next use.

Upon arrival, Facilty was thawing shrimp in stagnant water in the wash compartment of the 3-bay sink. Potentially hazardous food shall be thawed by one of the following procedures: (1) Under refrigeration that maintains the food temperature at 41°F or less (2) Completely submerged under running water at a water temperature of 70°F or below; with sufficient water velocity to agitate and float off loose particles in an overflow Water was discarded, shrimp were temped at 38°F, and relocated to the walk-in cooler.

Observed stirring utensils and other spoons being stored in stagnant water in the water well of the bar area. During pauses in preparation or dispensing, utensils may be stored in running water of sufficient velocity to flush particulates to the drain. Water was turned on.

Inspector Comments
Facilty does not have test strips for their warewashing machine, or the 3-compartment sink. A test kit or other device that accurately measures the concentration in mg/L or ppm of sanitizing solutions shall be provided for both areas.

Observed an open employee drink container above the food prep station on the shelf. An employee may not eat, drink, or use any form of tobacco in areas where the contamination of exposed food, clean equipment, utensils, linens, etc, can result. Keep all food and drink in designated areas only. This item was discarded.

Facility is not keeping shell stock records for 90-days. The identity of the source of shellstock that are sold or served shall be maintained by retaining shellstock tags or labels for 90-calendar days from the date the container is emptied.

Inspector Comments
1) Cheese was stacked high and above the frost line in the pizza prep unit, causeing it to stick to the interior of the lid. Always keep food itmes below the frost line to prevent it fom coming into contact with non-food surfaces. 2) Sliced zuccini was being stored below raw meats in the walk-in. Always store raw TCS products under ready to eat foods. This item was relocated to the vegetable area of the walk-in. 3) Large Ice Cube Ice Maker for the Bar: Food debris was found in the interior and resting on the ice. Also, a breading station wih raw egg was set up on top of the maker. Move breading station to prevent raw egg from contaiminating the ice. Also remove ice, food debris from maker, clean/santize inside and outside before next use.

There is evidance of food dumping in the hand sink by the warewashing area. Hand washing facilities are for handwashing only. This station was cleaned and all food debris was removed.

1) Several products held in the walk-in cooler are not being covered. Cover all products in refrigerators to prevent contamination. 2) Most dry good scoops are being stored in their containers with handles touching product. Make sure all handles are not touching product inside container.

Oberseved a food handler cleaning up a spill on the floor and put the wiping cloth used on the prep table. Once a spill is cleaned up, keep soiled rags away from all food and fos surfaces. It was removed, and the area was sanitized. All wares that were effected were moved to the warewashing area, hands were washed and new gloves were worn before handling food again.

Observed a few bar wares in stagnant water. During pauses in dispensing, utensils may be stored in running water of sufficient velocity to flush particulates to the drain, or on a clean sanitized holding surface for 4 hours. The water for the utensil holder was turned on.

The following area are in need of a detailed cleaning: 1) Back splash of the main cook line, down to the floor, and around the outlet 2) All baseboards and perimeters of the kitchen and dry storage area.
