Refrigerated, ready-to-eat, TCS food prepared and held in a food facility for more than 24 hours shall be clearly marked to be sold or discarded within 7 days or the manufacturers use by date whichever comes first.
41	In-use utensils: properly stored Inspector Comments Observed scissors resting on the sausage in the 3rd deli display case. During pauses in food dispensing, food utensils may be stored on the clean portion of the food preparation table or cooking equipment only if the in-use utensil and the table or equipment are cleaned and sanitized frequently. Remove item so that it is not resting in the food product itself to prevent contamination.

46	Warewashing facilities: installed, maintained, & used; test strips Inspector Comments Facility does not have testing strips for their 3-compartment sink sanitizer. A test kit or other device that accurately measures the concentration in mg/L or ppm of sanitizing solutions shall be provided.
47	Non-food contact surfaces clean Inspector Comments 1) The interior, and shelving of the Single Standup Display refrigerator contains black mold-like substance. Empty, clean, sanitize and maintain more frequently. 2) Floors in both the general area and the walk-in cooler are in need of a detailed cleaning. Maintain more frequently.
