Facility Serves raw sushi and does not have a consumers advisory on menu. All animal-derived food such as beef, eggs, fish, lamb, milk, pork, poultry or shellfish that is raw, undercooked, or not otherwise processed to eliminate pathogens, the food facility shall inform consumers by brochures, or other menu advisories, of the significantly increased risk associated with certain highly susceptible populations eating these foods in raw or undercooked form.? Advisory must be posted for the public, and added to next menu reprint.

The quaternary ammonia sanitizer in the 3 compartment sink is measuring at 500ppm. Always set up the 3-compartment sink to wash (soap & hot>110F water), rinse, and sanitize (50-100ppm chlorine or 200-300ppm quaternary ammonia). This compartment was drained and sanitizer replaced. It now reads 200ppm.

Always set up the 3-compartment sink to wash(soap & hot>110F water), rinse, and sanitize (50-100ppm chlorine or 200-300ppm quaternary ammonia). This compartment was drained and re-done so the sanitizer read 200ppm before the end of inspection.

A food temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature of thin foods, such as meat patties or fish fillets.
