Proper cold holding temperature

Inspector Comments
Observed TCS items on the prep counter above 41F. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Affected items immediately moved to hot holding and rapidly heated to 165F for 15 seconds. Facility instructed to conduct thawing in refrigerator. Items in top of Bain Marie unit are also exceeding 41F. Facility must ensure load limits are maintained and lid closed to help control temperatures. Probe thermometers should be used to regularly monitor internal food temperatures.
