Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. Cream cheese was not at a safe temperature for cold holding. TCS foods cannot be stored on top of prep unit wells, food will not stay cold in that location.

This facility seating capacity is restricted by the limited nature of the onsite septic system. The onsite system is sized for 12 seats and the facility current has 60 seats. You may submit a proposal for increased seating to this department for review and approval.
