Inspector Comments
Egg drop soup in the steam table was measured at 119°F. Potentially hazardous food that is cooked, cooled and reheated for hot holding must be reheated so that all parts of the food reach a temperature of at least 165°F for 15 seconds. Reheating for hot holding must be done rapidly and the time the food is between cold-holding temperature and 165°F may not exceed 2 hours. Soup was reheated to 173°F during inspection and placed back into hot holding.

Garden-style hose, faucet connector and sprayer were found connected to the faucet of the 3-compartment sink. These products are not approved for use at this location. All Food equipment must be certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program. Hose, sprayer and connections were removed during inspection.

Rice dispensing utensil found being stored in a container of room-temperature water with Chlorine added. During pauses in food preparation or dispensing, food preparation and dispensing utensils may be stored on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the table or equipment are cleaned and sanitized at required frequency. Solution discarded during inspection. Utensil moved to warewashing area.
