There is no paper towels at the hand wash sink in the bakery area. Each handwashing sink shall be provided with a supply of hand cleaning liquid, powder or bar soap, individual, disposable towels, a continuous towel system that supplies the user with a clean towel or a heated-air hand drying device.

Raw Time/Temperature Control for Safety (TCS) products such as raw eggs stored in reach in on cook’s line are being stored directly over ready to eat foods. Always store raw TCS products under ready to eat foods.
21 Proper date marking & disposition

Inspector Comments
Deli meats, prepared meat-based salads, and other ready to eat time/temperature control for safety (TCS) foods observed in several reach-in and lowboy refrigerators are not being date marked as required and/or mislabeled. Refrigerated, ready-to-eat, TCS food prepared and held in a food facility for more than 24 hours shall be clearly marked to be sold or discarded within 7 days or the manufacturers use by date whichever comes first.

Prep Unit is holding an ambient temperature of 47F. Internal temperature of products in this unit ranged from 43-47F. Must move all items to refrigeration that is holding 41F or below. Repair this unit to hold 41F or below.

Tin cans are being used to store food products and also being reused to store other items as well. All tin cans, once opened, must have contents transferred to a food grade container and discontinue reusing tin cans. Discard all open tin cans from food storage.
