Small Prep Unit on the cook line is holding an ambient temperature of 46F. Internal temperatures of products in this unit were 44F.
All Time/Temperature Control for Safety (TCS) foods must be cold held at 41F or below.
Server Reach In for milks and juices is also holding 48F.
Must discard all TCS food or move to location that can properly keep products at 41F or below, and discontinue use of these units until they can properly hold 41F or below.

Water may only be used if it is kept at a minimum of 135F, or has a constant draining flow.

3 compartment sink hot water is not exceeding 70F.
This was brought to managements attention, and service was called to get hot water heater serviced.
All wares must be final washed in the mechanical ware washing machine until the manual hot water faucet for the sinks is providing a minimum of 110F.
No other sinks were affected by this hot water issue.

There was no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. A completed application(SA-71)for CFSM, or proof of enrollment in an approved safety class must be submitted to the Department. CFSM arrived during inspection.

-Ice machine needs to be throughly cleaned and sanitized.
-Can opener in basement prep area needs to be detail cleaned and sanitized.
-To go containers must be stored in such a way that the food contact surface is not facing up.
Food contact surfaces must be clean to sight and touch, and stored in such a way to prevent any possible contamination.

Inspector Comments
Two cold hold units are not holding temperature properly. Affected TCS food was voluntarily disposed of and alternative measures will be used until units are repaired or replaced. Repairperson arrived during inspection. Email copy of service invoice to department upon repair.
Ice bath on cook line is not done properly. Replace ice in ice bath at a frequency that maintains proper temperature.
Prepped items observed doublestacked with clean pan on cold hold unit. Add ice to better maintain temperature.

The following units are not holding proper temperature:
1. Small back up prep Unit-45
2. Server Prep Top Unit-45
3. Prep area reach In-49
4. Walk In Cooler at 45F ambient, but 41F internal for products.
All Time/Temperature Control for Safety (TCS) must be cold held at 41F or below. If ambient Temperature was high, internal temperatures were taken of products. Ice baths were provided for immediate use items, other items were moved to working refrigeration, and some discarded.
Must repair all refrigeration to hold 41F or below.
Management stated that Walk in cooler will be worked on Wednesday.
