Walk In Cooler still had products that contained mold like growth. Must discard all food products that contain mold. Floors under shelving in Walk In cooler and walls are unclean with mold like growth as well. Provide a deep and detailed cleaning, sanitize all with chlorine based sanitizer and maintain.

Prep Unit in the kitchen was holding an ambient temperature of 48F. All products must be discarded. Repair this unit before using for service. Send service reports to this Department.

Inspector Comments
Several refrigeration units have food products that have grown a substantial amount of mold like growth. All food products must be in good condition, and not held longer than 7 days. Facility is closed Monday through Thursday, and only open Friday, Saturday and Sunday. Owner stated he cleans all food out on Fridays. Must discard all food that will spoil before leaving the facility for the week. Rotten food will cause pests. All moldy food products must be discarded.
17 Proper reheating procedures for hot holding

Inspector Comments
A pan of sauce was found in the steam table and was at 90F. All reheating of products must be heated up to 165F before placing in a hot holding Unit. Must heat all products to proper temperature before placing in a steam table to hot hold at 135F minimum.

Mechanical ware washing machine is not sanitizing properly. Must repair this unit to provide a sanitizer residual in the rinse cycle with a minimum of 50ppm chlorine. Use 3 compartment sink for wash, rinse and sanitize until machine can properly sanitize wares.
