In Tavern, a tray of cheese was found placed on top of the cooling line in the prep unit. All products must be placed in drop in containers or underneath in the refrigerated storage. Placing on top of the cooling line will not keep products in proper temperature.
These items were moved to underneath storage for proper cold holding.

Reduced oxygen packaged salmon was found thawed and still in vacuum sealed package. All fish must be removed from vacuum sealed container before it can be thawed. Discontinue allowing fish to thaw in a reduced oxygen environment.
