Monitor how long products are taken out of underneath refrigeration to be used at the prep unit, as cubed ham was observed to be sitting above the cool line. Cook stated that it was taken out to be used for salads. Ensure products are beneath the cool line of prep units or stored in refrigeration.

Prep Unit in the Tavern was holding proper temperature but the scrapple and pork roll in the top pan was internally holding 55F. The scrapple and pork roll were discarded. Top pan was being stacked on top of a pan of lettuce. Discontinue stacking as temperature can not cool two pans. Breakfast proteins were moved to bottom reach In of prep Unit and stacking was discontinued

In Tavern, a tray of cheese was found placed on top of the cooling line in the prep unit. All products must be placed in drop in containers or underneath in the refrigerated storage. Placing on top of the cooling line will not keep products in proper temperature. These items were moved to underneath storage for proper cold holding.

Reduced oxygen packaged salmon was found thawed and still in vacuum sealed package. All fish must be removed from vacuum sealed container before it can be thawed. Discontinue allowing fish to thaw in a reduced oxygen environment.
