Upon arrival into the warewashing area, there were a number of dry wiping clothes thrown all over the clean wares. These cloths appeared to be clean, and unused. Clean clothes shall be stored in a manor where they are away from food, wares, and utensils, and can not be contaminated. As a reminder: Soiled linens shall be kept in clean, nonabsorbent receptacles or clean, washable laundry bags and stored and transported to prevent contamination of food, clean equipment, clean utensils and single-service and single-use articles. All wiping clothes were removed from the warewashing area and away from the wares.

Upon arrival, there were two knives resting between the cutting board and the outside, unsanitized portion of the second prep on the cook line. During pauses in food preparation or dispensing, food utensils may be stored on the clean portion of the food preparation table or cooking equipment only if the in-use utensil and the table or equipment are cleaned and sanitized frequently. These items were removed and placed in the warewashing area.

Apple and Avocado were found buried in the lettuce in the salad prep unit. Must use separate equipment for each type or arranging each type of food in equipment so that cross contamination of one type with another is prevented. Both were discarded.

20 Proper cold holding temperature

Inspector Comments
1) Hamburger meat was being held above the frost line in the prep unit drawers and the top 5 layers were measuring temperatures of 50F. These layers were removed and discarded. 2) The diced tomato in the salad prep unit was measuring 63F. Tomato was still under time control, and facility was advised that they must be discarded after 4hours. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
36 Insects, rodents & animals not present; no unauthorized persons

Facility has a fruit fly issue. Pest control is aware and facility is actively trying to control them. Department made suggestion of red wine vinegar to help decrease the population.

Facility has evidence of heavy food dumping in the hand sink at the end of the cook line. Hand sinks are for hand washing only and may not be used for any other purpose. Discontinue food dumping and clean/sanitize the sink.

A stack of cheese was taken out of the refrigerated prep top and placed off to the side where it warmed, wilted and was not protected. Food shall be in good condition and held in a way that protects the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. This food product was discarded.

1) Upon arrival, there was a raw egg sitting on top of the chopped peppers in the first Prep Unit. Raw Time/Temperature Control for Safety (TCS) products must never be stored directly in or over ready to eat foods. Both the egg and the peppers were discarded. 2) Unwashed Avocado was being held in the mixed greens container in the refrigerated unit. Whole, unwashed food items may not be in contact with Ready-to-Eat food items. The mixed greens were discarded, and the avocado was taken to be washed. 3) The handles of scoop are resting in the dry food products in the dry storage area. Handles must always be resting outside of the food products to prevent contamination.

Facility is using foil to line high splash and spillage areas. All areas must contain surfaces that are cleanable and non-porous. Surfaces of equipment that are nonfood-contact surfaces, but are exposed to splash, spillage or other food soiling or that require frequent cleaning, shall be constructed of a corrosion-resistant, nonabsorbent and smooth material. Remove all foiled surfaces.

1) BLT sandwich was sitting in Prep Unit #3, bottom drawer - not wrapped or on food safe ware, and beling held with other items: uncovered Peperoni and open package of mozarella. RTE items must be covered and protected from other foods while in cold-holding. The BLT was discarded. 2) Two measuring cups are being used as scoops for the flour in the dry storage area, and handles are resting in product. Must use a proper scoop with handle sticking out of product to prevent contamination.

All spouts and wells were removed, cleaned, and sanitized before the conclusion of this inspection.

Shredded Cheese, Pasta, and Chopped Oinion were being held in the same unit as sealed, packaged fruit cups, and ketchup bottles. These items were ranging in temperature from 60-63 degrees F. 18 Proper cooling time & temperature

Sliced tomatoes observed maintaining poor product temperature of 48F in worktop refrigerator. All other food products temped in this unit were 40F or below. Chef indicated that tomatoes were sliced today. Time/temperature control for safety food (TCS) products from ambient temperature must be cooled from 70F to 41F within 4 hours. Cool all TCS food products in walk-in cooler/freezer to achieve time/temperature requirements. Instruct employees to stock worktop refrigerators only when TCS food product is 41F or below. Add to cooldown log.
