Upon arrival, stand had no ice in any of the large travel/transport coolers, the small display coolers, or the buckets that they had on display. The mixed olives that were in the large travel cooler were measuring temperatures of 44F, and the cheese stuffed olives in the small display coolers were measured 47F.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
Stand was temporarily asked to stop selling, and worker was advised that ice was needed. Ice was brought back, ice was put in the container, but some of the products were not encased in ice. Anything that was not encased was moved to the large cooler with the advice that can not be sold.

Various size snap-top lidded containers containing pickles, olives, etc. were found stored in coolers of ice/ice water to maintain cold-holding temperature. Ice has turned to an ice water slurry due to ambient conditions, with excess water not being continuously drained from coolers. Many containers are completely submerged under the ice water. Containers are not factory sealed.
Packaged food may not be stored in direct contact with ice or water if the food is subject to the entry of water because of the nature of its packaging, wrapping or container or its positioning in the ice or water.

1) Upon arrival, facility’s ice bath contained an insufficient amount of ice to keep it’s TCS food cold.
2) Facility is double stacking its products in the ice bath. TCS foods must be submerged in the ice in order to maintain proper product temperature.
3) All coolers containing TCS food products did not have any ice or cooling device to maintain proper product temperature.
4) Home Depo liquid coolers containing all different type of pickles were maintain improper product temperature ranging from 45-47ºF.
