Observed an open employee drink in the main dining area, directly next to the silverware. An employee may not eat, drink, or use any form of tobacco in areas where the contamination of exposed food, clean equipment, utensils, linens, etc, can result. Keep all food and drink in designated areas only.

1) Several products held in the single refrigeration unit by the grill are not being covered. Cover all products in refrigerators to prevent contamination.
2) Cooked potatoes in a pot are being stored of the floor, below a shelf that is storing raw eggs.
a) Always store food ateast 6inches off of the floor to prevent contamination
b) Always store raw food products below ready to eat foods to prevent contaimination
Relocate to a safer spot.

Scraper was being stored between sink, and prep table. Storage on cleaned and sanitized tables or equipment. During pauses in food preparation or dispensing, food preparation and dispensing utensils may be stored on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the table or equipment are cleaned and sanitized frequently.
This item was removed and placed in the warewashing area.

Inspector Comments
1) 3 bowls of lettuce were stacked in the refrigerator with the bottoms of the bowls touching each layer, without a protective barrier. Always cover food to protect from contamination.
2) The top slice of cheese was not covered or protected once it was opened from it's original packaging. This slice had food debris resting on it. It was discarded.

Proper cold holding temperature
Inspector Comments
The undermount refrigerator closest to he doorway to the kitchen was measuring an ambient temperature of 52 degrees F, along with all of the food product measuring between 52-55 degrees F.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
The potatoe, and tuna salads were discarded. The chicken salad was moved to a shallow container and placed in the freezer for faster cooling since it was just made this morning. It was re-temped at 42 Degrees F before the conclusion of this inspection.
Call for service, submit proof of service to the Department, and maintain more frequently.

There were a few clean/sanitized utencils handing directly next to the hand sink and were exposed to splashing. These were items were relocatd to a different area for better protection.
