Slices of cheese were sitting out of their compartments on top of unclean surfaces on the Prep Unit. Food shall only contact surfaces of equipment and utensils that are cleaned and sanitized. Food touching the unclean surface was discarded.

Upper interior surface within the soda machine ice spout contains pink and black mold. Clean and sanitize interior surfaces prior to next use.

Inspector Comments
Bacon in the single stand up refrigerator, and in the Prep Unit were measuring temperatures of 63°F and 59°F Time/temperature control for safety (TCS) food must be cold held at or below 41ºF. If time--rather than temperature--is used as the public health control the food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from temperature control.

Inspector Comments
The Cicken Bacon Ranch and Cheesestake pretzels in the hot holding unit are not at safe temperature. Hot food must be held at 135°F or above. The temperature of the hot hold unit was increased due to the food still being within time control. Items will be rechecked within the hour.

Inspector Comments
Several products being held in the stand up refrigerator and prep unit are not being covered, and cheese scraps were just sitting on the shelf unprotected. Cover and store all products properly in refrigerators to prevent contamination. The cheese scraps were discared.

Inspector Comments
Both scrambled eggs and cooked bacon in the stand up refrigerator were measureing temperatures of 60 and 50 degrees F. Cooked time/temperature control for safety (TCS) food shall be cooled as follows: (1) Within 2 hours, from 135°F to 70°F. (2) Within 6 hours, from 135°F to 41°F or less Time/temperature control for safety (TCS) food shall be cooled within 4 hours to 41°F, if prepared from ingredients at ambient room temperatures. Move these items to shallower containers to allow faster, safer cooling.

Pepsi machine has an accumulation of a mold-like substance inside the ice chute. Have this unit professionally cleaned.

Inspector Comments
Chicken cooked and chopped from this morning was 50°F. The CFSM moved chicken to shallow conatainers to cool. Foods in the prep top unit stored above the frost line ranged 45-50°F. These were removed down to the frost line and stored under proper refrigeration. Do not cool foods inside prep top unit. Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
